It seems I keep reading more about the health benefits of olive oil, including both reducing risk of heart disease as well as helping reduce risk of developing type 2 diabetes. Have you made changes in your diet to increase olive oil consumption? What are your favorite ways to use olive oil at home?

I have pretty much switched to using olive oil in all my cooking --- sauteeing, baking, frying, steaming too. I love it... because the food seems to be much less heavy than with other cooking oil... can taste the food better.

A friend of mine told me she made the traditional chex party mix the other day, and used olive oil instead of margarine or butter. Not only did she prefer the taste with olive oil, but she also used only half the amount called for without any negative results!
