My favorite soup in the summer is gazpacho. I use the blender and toss in tomatoes, cucumbers, green and red peppers, garlic, and tomato juice to thin to the right consistency. Sometimes I add diced veggies after I've finished blending the ingredients to give it a chunkier texture. It's a snap to make, keeps well in the fridge, and I can even put some in a thermos and take it with me to work! |
