Soup is a great way to get nutrition and can be a good way to lose weight, as just one cup or bowl can make you feel surprisingly full and squash the urge to eat unhealthily in between meals. Making soup yourself is the best way to track your sodium while adding nutritious foods to your diet such as beans, kale and onions.

Are you a soup eater? Has it helped you lose weight?

My favorite soup in the summer is gazpacho. I use the blender and toss in tomatoes, cucumbers, green and red peppers, garlic, and tomato juice to thin to the right consistency. Sometimes I add diced veggies after I've finished blending the ingredients to give it a chunkier texture. It's a snap to make, keeps well in the fridge, and I can even put some in a thermos and take it with me to work!
